Avocado, Cheddar, Sprouts Pocket with Tangy Lime Mayo

3 cups sprouts

1 small red onion thinly sliced

1 tsp. lime zest

4 tsp. Lime juice

1/4 tsp salt

2 tbs. Light Mayo

2 avocados sliced

1/2 cup sharp cheddar shredded

4 large whole wheat pitas, halved


Mix, lime zest, juice, mayo, salt, sprouts, onion and cheddar and place in pockets.


Tuna Burgers

1 (6oz) can albacore tuna

1/4 cup dry bread crumbs

1/4 cup onion finely chopped

2 tbs. Light mayo

1 egg

1 tsp. lemon juice

1 tsp dried parley

1/8 tsp. garlic powder


Mix all ingredients together and form into patties. Pan fry until patties are firm. Serve on a whole wheat bun with tomatoes, red onion and lettuce if desired)


Crispy Almond Baked Chicken Strips

3 chicken breasts cut into strips
2 eggs
1 cup low fat yogurt
2 tbs dijon mustard
1 package Saltine Crackers
1/2 tsp garlic powder
1 tsp paprika

In a large glass bowl marinate chicken in yogurt and mustard. Preheat oven to 400 degrees
and place wire rack on top of cookie sheet.(the wire rack allows chicken to crisp on both sides.)
Puree crackers and almonds until it is a fine mixture. Dip chicken into mixture until well coated and
Place on wire rack. Bake for 15 minutes or until chicken is no longer pink in the middle. (serve with baked French fries)


Salmon with Creamy Horseradish Sauce

4 4oz salmon fillets

1 Lemon

Salt and Pepper

1 cup Low fat sour cream

1 tsp. horseradish

1 tsp. worcestershire


Season Salmon with lemon and pepper and bake for 30 minutes at 375 degrees. Mix Sour cream, Horseradish and worcestershire and serve it over the salmon when done.


Meat and Cabbage Casserole

1 small cabbage shredded

1/4 cup minced onion

2 tbs. molasses

2 tsp. salt

1/2 tsp nutmeg

1 lb. ground turkey meat

1 cup panko bread crumbs

1/2 cup 1% milk

2 eggs 2 tbs. parmesan cheese


Preheat oven to 350 degrees. Simmer cabbage until tender-crisp and drain. Add onion, molasses, salt, nutmeg and stir well. In a bowl, mix ground turkey, breadcrumbs, eggs and milk. Spray a 2 quart casserole dish with PAM spray. Starting with the cabbage mixture, place a layer in the bottom and proceed with meat mixture. Layer back and forth until the last layer is cabbage. Sprinkle with Parmesan and bake for 1 hour.


Turkey Ranch Burger

1 lb. ground turkey meat

1 package ranch dressing mix

1 egg

1/2 cup bread crumbs

6 whole wheat buns


1 tomato sliced


Mix, turkey, egg, ranch seasoning, bread crumbs and form patties. Grill or pan fry with PAM spray. Serve on bun with tomato and lettuce.


Apple-Rosemary Pork Chops w/ Craisins - Submitted by Shazzy

6-8 thin cut pork chops, fat trimmed

2-3 sprigs of fresh rosemary

1/8 cup apple juice

1/3 cup Craisins

cooking spray


Lightly spray pan and heat over medium-high heat. Add apple juice and bring to a simmer. Add rosemary and craisins.

Simmer for 2-3 minutes to infuse juice with rosemary essence. Add pork chops and cook until cooked through. Remove pork chops and reduce sauce by about half. Serve pork chops and spoon sauce on top. Makes enough for 3-4 people

Baked Chicken with Peaches

8 skinless, boneless chicken breast halves

1 cup brown sugar

4 fresh peaches - peeled, pitted and sliced

1/8 teaspoon ground ginger

1/8 teaspoon ground cloves

2 tablespoons fresh lemon juice


Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish. Place chicken in the prepared baking dish, and sprinkle with 1/2 cup of brown sugar. Place peach slices over chicken, then sprinkle with remaining 1/2 cup brown sugar, ginger, cloves, and lemon juice. Bake for about 30 minutes in the preheated oven, basting often with juices, until chicken is cooked through and juices run clear.
