Green Beans with Bread Crumbs

1 pound fresh green beans

1/4 cup  bread crumbs

1/4 cup olive oil

2 garlic cloves crushed

1/4 tsp. dried oregano

1/4 tsp. dried basil

1/4 cup grated Parmesan cheese

 

Put green beans and about 1/2 cup water in pot and bring to a boil. Reduce heat and let beans cook until tender. Drain.  Place beans into a serving dish and toss in the bread crumbs, olive oil, garlic, basil and oregano. Add salt and pepper to taste. Sprinkle with Parmesan cheese, and serve.

 

Provincial Tomatoes - AllRecipes

2 large tomatoes, cut into 1/4 inch slices

salt and pepper to taste

1 tablespoon olive oil, or as needed

1/2 cup grated Parmesan cheese

1/4 cup grated Asiago cheese

1/4 cup dry bread crumbs

2 tablespoons dried parsley

 

Preheat your oven's broiler. Place tomato slices in a single layer on a baking sheet or in a baking dish, season with a little salt and pepper, and drizzle with olive oil. Mix together the Parmesan cheese, Asiago cheese, bread crumbs and parsley; sprinkle over the tomato slices. Drizzle a little bit more olive oil over the top. Broil for 5 minutes, or until the top is golden and toasty

 

 Italian Kale

1 bunch kale, stems removed and leaves coarsely chopped

1 clove garlic, minced

1 tablespoon olive oil

2 tablespoons balsamic vinegar

Salt and ground black pepper to taste

 

Cook the kale in a large, saucepan until the leaves wilt. Stir in the garlic, olive oil and vinegar.  Add salt and pepper to taste.

 

 

 

 

Tiramisu Popsicles

1 package of chocloate pudding mix

1 cup evaporated milk

2 cups 2% milk

1 tbs. of instant coffee

1/2 tsp. almond extract

 

Blend in blender and pour into popsicle molds. Freeze for 3-4 hours. Enjoy!
