Garlic French Fries

6-8 golden potatoes cut into strips

2 tbs. garlic powder

1/2 tsp salt

 

Boil potatoes until they are slightly soft. Drain and let cool. Toss in oilve oil, salt and garlic powder. Bake on cookie sheet for 30 minutes or until crisp.

 

Cheese Fries - Submitted by Shazzy

1 spray(s) olive oil cooking spray

2 large uncooked potato(es), Idaho, peeled and cut into 1/4-inch-thick strips

1/4 tsp table salt, or to taste

1/4 tsp black pepper, or to taste

1/2 cup(s) low-fat shredded cheddar cheese, sharp-variety

 

Preheat oven to 400ºF. Coat a large baking sheet with cooking spray. Arrange potatoes on prepared baking sheet; season to taste with salt and pepper. Bake 20 minutes; flip fries and cook untl golden brown and fork tender, about 20 minutes more. Cluster potatoes together on baking sheet and sprinkle with cheese; bake until cheese melts, about 5 minutes. Yields 1/4 of fries per serving. 

 

Herbed CousCous

1 tsp. butter

2 cloves garlic minced

1 medium green onion chopped

2/3 cup couscous

1 1/3 cups chicken broth

1 tsp. dried basil

1 tsp. dried thyme

2 tbs. grated parmesan cheese

 

Melt butter and cook garlic and onion. Stir in broth and salt. Heat until boiling. Stir in couscous. Remove from heat and let stand for 5 min. Fluff with fork and add in basil, thyme and parmesan.

 

Crab Dip - Submitted by Shazzy

2 spray(s) cooking spray

6 oz light cream cheese, softened to room temperature

1/2 cup(s) Low Fat, Plain Greek Yogurt

3 Tbsp onion(s), finely minced

1/2 pound(s) lump crabmeat, fresh or canned, drained

1/2 tsp hot pepper sauce, or more to taste

1/2 tsp table salt, or to taste

2 Tbsp dry sherry, or sweet sherry (or to taste)

 

Preheat oven to 325ºF. Coat a 7-inch baking dish with cooking spray. n a medium bowl, combine all ingredients and mix until thoroughly combined. Spoon mixture into prepared dish and bake until dip is heated through and center is no longer runny, about 20 to 25 minutes. Cool slightly before serving. Yields about 2 tablespoons plus 2 teaspoons per serving.

 

Dirty Rice

(goes well with fish or chicken)

1 box of Uncle Ben's Wild Rice mix.

1/2 onion chopped

2 stalks celery chopped.

1/2 tbs oil

 

Saute onion and celery Add water, rice and seasoning. Bring to a simmer and turn the heat down to low. Cover on low for 25 min.

 

 

Fruit Parfait - submitted by Sharon

 

Take 1/2 container (about 2-3 oz.) of light yogurt (fruit flavor)

add 1/4 cup chopped strawberries, cherries, or other fresh berries

 

To add some fiber, sprinkle some quick oats on top to make a parfait! this is beyond delicious! Try this to get your 5 servings of fruits and veggies every day! For Dessert or breakfast.


Almond Meringue Cookies

2 egg whites

1/8 teaspoon cream of tartar

1/8 teaspoon salt

1 teaspoon vanilla

3/4 cup sugar

1/2 cup almonds

 

Preheat oven to 300 degrees. Beat egg whites with an electric mixer on high until they form peaks that hold their shape. Slowly add cream of tartar, salt, vanilla and sugar. Mix until whites hold a firm peak. Chop almonds in a food processor and fold into meringue mixture . Drop by small spoonsfull, onto a lightly greased baking sheet. Bake for 25 minutes.

 

Strawberry Shortcake Popsicle

4 cups strawberries pureed

1 cup non-fat vanilla yogurt

1/2 cup fat-free sweetened condensed milk

3 cups corn flakes

 

Puree strawberries and mix in yogurt and milk. Pour popsicle molds. Freeze 3-4 hours. Remove from molds. and coat each popsicle with crushed cereal.
Wrap and freeze any pops you are not immediately eating
