Hot German Potato Salad 

6-8 medium potatoes

1 medium onion, chopped

1/2 chicken broth

6 oz. chopped ham

1/4 cup apple cider vinegar

1/4 cup sugar

2 tbs. Brown mustard

2 tbs. flour

Chop and boil potatoes. Cook onions, and ham and mix in the broth, vinegar, sugar, mustard. Whisk the flour into mixture. Adjust sugar to vinegar ration by tasting. Coat potatoes with dressing.

 

Schnitzel

4 chicken breasts

2 eggs

1 1/2 panko bread crumbs

1/2 tsp. salt

1/2 tsp. garlic powder

PAM spray

 

Pound chicken to 1/4 inch thickness. In a separate bowl mix egg with 1/4 cup water and dip chicken in mixture and then in panko bread crumbs. Pan fry in a saute pan with PAM spray. Keep adding spray as needed. 

 

Sauerkraut with Pork and Apples

1 cup sauerkraut

1/2 sliced onions

2 slices bacon

2 cups sliced apple

1 1/2 cups cooking wine

1/2 chicken stock

1 tbs. brown sugar

1 tsp. celery seed

 

Preheat oven to 350 degrees. Cook bacon and set aside. In a separate skillet, saute onions and add sauerkraut and apples. Pour in the wine and chicken stock. Place in a glass baking dish and bake for 30 min. Crumble bacon and add sugar and celery seed. Bake for another 30 minutes and serve.

 

Potato Pancakes

2 lbs freshly grated potatoes or frozen hashbrowns

1 small onion minced

2 tbs. flour

2 eggs

2 tsp. chopped parsley

1 tbs. vegetable oil.

2 strips bacon cooked and crumbled

 

Mix all ingredients and make into patties. Cook in vegetable oil until brown and crsip. Flip and repeat for other side. Serve with low fat sour cream and salad.
